About the event
Join us for the final days of mussel foraging until it closes on May 1st for the year. This is a special food-focused event with Chef Geronimo Carlos Ramos. He's going to teach how to make this special-occasion version of tinola, the beloved Filipino ginger soup typically made with chicken. "My grandma reserved this mussel variation for weekends, rainy days, and whenever fresh mussels were on sale at the market. She knew what many cooks overlook: the mussel liquor creates a depth of flavor that outshines even the best chicken broth. The sweet brininess mingles with ginger's warmth and the aromatic trio of garlic, onion, and fish sauce to create something far more complex than its humble ingredient list suggests."
