About the event

Join us to learn how to break down a whole king salmon and use all the parts. Using the whole fish is metaphor for how these fish connect the ocean to rivers, land, and the sky. You’ll pitch in on brining eggs for ikura (if we have the eggs!), smoking the belly and collar, making stock from the head and frame and more. We’ll be sipping and tasting as we go and finish with king salmon dinner on a beautiful rooftop terrace in the SOMA neighborhood of San Francisco.

Smoked salmon rilletes served on seaweed-oat & nut bread.

Golden Eye Sparkling wine or N/A elderflower, Meyer lemon and honey fermented soda


Wrap your own salmon eggs, with sushi rice and toasted fresh, wild nori with ponzu and fresh wasabi.
